YUMMY Banana Fudge Cake Recipe

Of course as I was thinking about posting my recipe I notice that Dutch Goes The Photo has a challenge this week. I’m posting my absolutely delicious recipe for this cake for the challenge.


2 ripe mashed bananas

1.5 cups plain (AP) flour

1/3 cup melted butter

1 teaspoon baking soda

3/4 cup caster sugar

1 beaten egg

1 teaspoon vanilla extract

4 ounces/110g of fudge chopped into tiny pieces. I make fudge so do a search on my site to get recipes.


Preheat the oven to 175C/350F

Use liners or grease a loaf tin.

Mix the mashed bananas and eggs together in a large bowl.

Pour in all the other ingredients and mix, except for the fudge.

At the very end stir in the fudge pieces.

Spoon the mixture into the lined or greased loaf tin.

Bake for around 50 minutes, test for done-ness by inserting a cocktail stick into the cake. If the stick comes out clean the cake is ready.

Lift the cake out of the oven and allow to cool on a wire rack in the tin for about 10-15 minutes. Then remove the cake from the tin to cool fully.

Once it’s cool slice up and enjoy. Try it with some butter!
