I made chocolate muffins this week.
They actually were super rich and chocolatey and truthfully probably a bit much to eat in one sitting. I found that cutting one in half was just a perfect amount for me.
Ingredients
250g self raising flour (8.8oz)
175ml milk. (6.2oz)
2 large eggs
100ml olive oil (3.5oz)
70g of chopped up chocolate (I had little chocolate Santas that we chopped up) (2.5oz)
25g cocoa powder (0.9oz)
2 teaspoons baking powder
75g Coconut sugar (or brown sugar – whatever you have in) (2.6oz)
100g caster sugar (3.5oz)
1 teaspoon vanilla extract
Icing or frosting to decorate with
Method
Preheat the oven to 200C (395F).
Place 12 muffin cases in a muffin or cupcake tin.
In a large bowl mix all the ingredients together, adding the dry ingredients first.
Spoon the mix into the muffin cases.
Bake for around 20-25 minutes, until an inserted cocktail stick comes out clean.
Cool completely on a wire rack.
Decorate as desired.
There is not much a person should have to avoid to stay healthy…..it’s all in not over doing it lol And while your deserts may have butter and sugar, they are free of all those pesky artificial ingredients!!! Keep those recipes coming!!!
Thing I see is that my recipes may seem a lot, but we are a large family and by the time everyone gets share plus one or two for neighbours there’s no chance of doing anything in excess. Besides now, bought muffins and bread just don’t hit that spot. I make all of our meals from scratch too, I don’t ever buy pre packed dinners. Mainly because I have a couple severe food allergies but also because I enjoy cooking and my family enjoy it more.
