It’s the big day for Sol. We are heading out shortly to do the first recording for the TV animation show that she will be acting in. I couldn’t go without saying “hello” to everyone and of course I want to publicly wish Sol good luck. She’s a special girl. (Like all of my children), very talented in many ways and totally deserves this opportunity to shine.
On that note, after a two week hiatus in the kitchen I managed to get my mixing bowls about and bake this week. I have made several breads already including this monster loaf.
I also made a few dozen muffins for us and the neighbours.
One of the sets of muffins I made was coconut muffins.
Heres the recipe.
200g plain flour (7 oz)
100g caster sugar (3.5oz)
120ml milk (4.2oz)
60ml (4tablespoons) vegetable oil
2 teaspoons baking powder
1/2 teaspoon salt
50g desiccated coconut (1.7oz)
Pink/red food colour
Preheat the oven to 200C (395F)
Place 12 muffin cases in a muffin tin.
In a large bowl beat the egg, then pour in the milk.
Mix all of the other ingredients with the egg and milk until well combined.
Spoon the mix into the 12 muffin cases.
Bake for 20-25 minutes until a cocktail stick comes out clean.
Cool on a wire rack.
Decorate as desired.
