We had made these for our coffee morning two weeks ago. Yes, you had to wait this long to get the recipes, I am sorry but it could not be helped. I am only catching up now with the recipes which I had stored in my drafts folder. I find also this recipe freezes well, often at Christmas I make a few trays of these and freeze them, along with other goodies and I can call upon this chocolate stash whenever I need to. This recipe isn’t quite a true rocky road recipe. Just that I find some smaller children are not too fussy on glacé cherries and I have a nut allergy so there are no cherries and no nuts included. So here is an amended rocky road recipe just for you … Cheater Rocky Road.
4 tablespoons golden syrup
200g rich tea biscuits or Marie biscuits
150g mini marshmallows
Crush up the biscuits into fingernail size chunks, crumbs in the mix are very acceptable.
Melt the butter, chocolate and syrup in a large pan on a low heat.
Once melted the chocolate mix is ready for you to mix in the biscuits.
Once the biscuits are combined stir in the mini marshmallows, mix extremely well.
Spoon the chocolate mix into foil trays and allow to set in the fridge.
Slice and serve.
