For the picnic lunch I made cookie cake, it is a big hit in my house. I’ve only made it a few times, but when I do I get requests for second helpings.
I used a Swiss roll pan for making this in, when the cookie cake comes out of the oven it looks nothing special. Once it’s cut up and eaten the taste makes up for the lack of beauty.
2 1/4 cups plain flour (ap)
1 cup softened butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 large eggs
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla essence
2 cups chocolate chips
Preheat the oven to 375F/190C.
Grease your Swiss roll/ jelly roll pan. Mine is resting on top of another oven tray, but what you can’t see in the photo is that my Swiss roll pan is silicone.
Beat the butter, vanilla essence and sugars together.
Add the eggs one at a time, beating after each addition.
Beat the flour in then stir in the chocolate chips.
Spread into the Swiss roll pan.
Bake for 20-25 minutes until golden brown.
Cool on a wire rack.
Slice into bars or squares.
