Chocolate Buttons Muffins

Monday mornings are the worst! Everyone is of a mindset that Mondays are horrible and it automatically puts everyone on the wrong foot. My youngest believes she hates Mondays, other half always feels unmotivated. The middle two children find it hard to get out of bed and the eldest child swapped his shifts today so he could lay in. I got up early with the idea of having a cup of tea and a leisurely breakfast in mind, that did not happen.

It is lunch time now and I am on here sharing this muffin recipe with you, I hope you like it. Chocolate can brighten up anybody’s day.

Recipe – Makes 12

225g (8oz) self raising flour

75g (2.6oz) butter

75g (2.6oz) caster sugar

75g (2.6oz) Chocolate buttons

1 egg

110ml milk (4oz)

Method

Preheat the oven to 200C/390F

Add the flour to a large bowl, rub in the butter so the mixture looks like breadcrumbs.

Add the sugar and stir it in.

Mix in the egg, milk and chocolate buttons.

Spoon the mixture into muffin cases and bake for 10-15minutes until they are golden brown.

Cool on a wire rack.

Decorate as you wish, I melted chocolate onto the top of mine.

If you use icing you can mix 100g (3.5oz) icing sugar with a couple tablespoons warm water. Then spoon over the top of your muffins, the choice is yours.
