This cake is loosely based on the apricot loaf I previously made. Everyone had complimented me on the apricot & ginger loaf so I thought why not make a similar base and add in different flavours. It worked really well, the oats gave the loaf a nice soft texture, the honey compliments it all nicely. I named it a dump loaf because I literally dumped everything in one bowl and mixed. When you have made this loaf, let it cool before you slice it. Serve a slice with a lashing of butter and enjoy.
Recipe
1.5 cups plain flour
1/4 cup caster sugar
1/4 cup brown sugar
1/2 cup melted butter
1/2 cup milk
2 eggs
1 teaspoon baking powder
1/4 teaspoon salt
1 cup oats
3 – 4 tablespoons runny honey
Method
Preheat the oven at 350F/175C
Mix all the ingredients except the oats and honey together in a large bowl. Once combined stir in the honey and oats.
Spoon the mix into a greased loaf tin (or use a liner) and bake for approximately 50minutes.
Your loaf is ready when you stick a cocktail stick in the loaf and it comes out clean.
This is yet another winner! I like the idea of a dump loaf, or a dump dish-what we used to call “slumgullion”.
